Description
This dish features grilled shrimp served on a bed of zucchini noodles, drizzled with a citrus marinade for a fresh, light meal.

- 1 pound large shrimp, peeled and deveined
- 2 medium zucchinis, spiralized into zoodles
- 2 tablespoons extra virgin olive oil
- 1/4 cup freshly squeezed orange juice
- 2 tablespoons freshly squeezed lime juice
- 2 cloves garlic, minced
- 1/2 teaspoon red chili flakes (adjust to taste)
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a bowl, whisk together olive oil, orange juice, lime juice, minced garlic, salt, pepper, and chili flakes. Let sit for 10 minutes.
- Add shrimp to the marinade, tossing gently until coated. Cover and refrigerate for at least 15 minutes.
- Spiralize the zucchinis and set aside on paper towels.
- Preheat grill or grill pan over medium-high heat. Skewer marinated shrimp (if using wooden skewers, soak them first) and grill for 2-3 minutes per side until pink and opaque.
- In a skillet over medium heat, add olive oil and sauté zoodles for 2-3 minutes until just tender but crisp.
- Serve zoodles topped with grilled shrimp and garnish with fresh herbs.
