Description

This delicious chicken chili is packed with flavors and perfect for a cozy meal!


Ingredients

Scale
  • 3 tablespoons olive oil
  • 1 medium onion (chopped)
  • 5 cloves garlic (about 1 tablespoon minced)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper
  • 1 teaspoon chili powder
  • 1 & 1/2 teaspoons cumin
  • 1 & 1/2 teaspoons oregano
  • 1 (1-ounce) package of Ranch seasoning (dry)
  • 1 (10-ounce) can Rotel (or a can of diced tomatoes)
  • 1 (7-ounce) can diced green chilies (fire roasted recommended)
  • 1 (14-ounce) can white beans (navy beans or cannellini, drained)
  • 1 (14-ounce) can pinto beans (drained)
  • 2 & 1/2 cups shredded rotisserie chicken (about 12 ounces)
  • 3 cups water
  • 1 tablespoon Better Than Bouillon Chicken Base
  • 1 (8-ounce) package cream cheese (softened; low-fat cream cheese is fine)
  • 1 & 1/2 cups frozen corn (or canned corn is fine)
  • toppings: shredded cheddar cheese, sour cream, cilantro, limes, avocado, jalapeno, green onion, and tortilla chips

Instructions

  1. Prep all ingredients: chop onion, mince garlic, and measure spices.
  2. Heat olive oil in a large pot over medium-high heat; sauté onions until translucent (3–5 minutes).
  3. Add minced garlic and spices; sauté for another 2 minutes.
  4. Stir in Rotel and green chilies; mix well.
  5. Add drained white beans and pinto beans, followed by the shredded chicken.
  6. Pour in water and stir in bouillon; bring to a boil.
  7. Add cream cheese in cubes; simmer for at least 5 minutes.
  8. Stir in corn before serving hot with your choice of toppings.

Notes

  • This chili can be adjusted with different toppings according to your preference.
  • For extra creaminess, ensure the cream cheese is fully melted into the chili.
