Description
A comforting shepherd’s pie made with ground beef or lamb, vegetables, and creamy mashed sweet potatoes.

- 1 lb ground beef or lamb
- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 1 cup frozen peas
- 3 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 2 tbsp Worcestershire sauce
- 2 large sweet potatoes, peeled and cubed (about 4 cups)
- 2 tbsp butter
- 1/4 cup milk
- Salt and pepper to taste
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- Boil sweet potatoes in salted water until tender (about 15 minutes). Drain and set aside.
- In a skillet, heat oil over medium heat. Sauté onions and carrots until softened (about 5 minutes).
- Add ground meat, cooking until browned (approximately 7 minutes).
- Stir in garlic, peas, Worcestershire sauce, broth, salt, pepper, thyme, and rosemary; simmer for 10 minutes.
- Mash sweet potatoes with butter and milk until smooth. Season to taste.
- Preheat oven to 400°F (200°C). Spread meat mixture in a baking dish; top with mashed sweet potatoes.
- Bake for 25–30 minutes until golden on top.
Notes
- This dish can be made ahead and refrigerated before baking.
- Feel free to add other vegetables like corn or bell peppers.
