A delicious Thai-inspired chicken stir-fry with a sweet and spicy sauce.

- 1 pound chicken thighs
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 3 tablespoons honey
- 1/4 cup Thai sweet chili sauce
- 1 tablespoon rice vinegar
- 1 tablespoon Sriracha
- 2 tablespoons cornstarch
- 1 tablespoon lime juice
- 2 green onions, chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons oil for cooking
Instructions
- Cut chicken thighs into bite-sized pieces and toss with cornstarch until coated.
- Heat oil in a skillet over medium-high heat. Sear the chicken in a single layer, cooking in batches if needed, until golden and fully cooked.
- In a bowl, whisk together soy sauce, honey, Thai sweet chili sauce, rice vinegar, Sriracha, garlic, and ginger.
- Pour the sauce mixture into the pan with the cooked chicken.
- Simmer for a few minutes until the sauce thickens and coats the chicken well.
- Remove from heat, stir in lime juice, and toss to combine.
- Garnish with chopped green onions and cilantro before serving.
- Serve hot over jasmine rice, noodles, or in lettuce cups.

- This dish is best served immediately while hot.
- Adjust the level of Sriracha to control spiciness.
