- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 3/4 cup peanut butter chips
Instructions
- In a large mixing bowl, cream together 1/2 cup of softened unsalted butter, 1/2 cup of creamy peanut butter, 1/2 cup granulated sugar, and 1/2 cup brown sugar until smooth. Beat in 1 large egg and 1 teaspoon vanilla extract.
- Stir in 1 1/4 cups of all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt until just combined.
- Gently fold in 1 cup mini marshmallows and 3/4 cup peanut butter chips. Make sure they’re evenly distributed without overmixing.
- Cover the dough and chill in the refrigerator for 30 minutes. This helps prevent spreading while baking.
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop the dough into 1 inch sized balls (about 18 cookies total). Place on the sheet 2 inches apart.
- Bake for 10-12 minutes or until edges are golden but centers look slightly underbaked. Let them rest on the sheet for 5 minutes before transferring to a wire rack.
Notes
- These cookies are best served fresh but can be stored in an airtight container for a few days.
- For a richer flavor, consider adding chocolate chips.
