Description

Delicious cookies packed with peanut butter, mini marshmallows, and peanut butter chips.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 3/4 cup peanut butter chips

Instructions

  1. In a large mixing bowl, cream together 1/2 cup of softened unsalted butter, 1/2 cup of creamy peanut butter, 1/2 cup granulated sugar, and 1/2 cup brown sugar until smooth. Beat in 1 large egg and 1 teaspoon vanilla extract.
  2. Stir in 1 1/4 cups of all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt until just combined.
  3. Gently fold in 1 cup mini marshmallows and 3/4 cup peanut butter chips. Make sure they’re evenly distributed without overmixing.
  4. Cover the dough and chill in the refrigerator for 30 minutes. This helps prevent spreading while baking.
  5. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop the dough into 1 inch sized balls (about 18 cookies total). Place on the sheet 2 inches apart.
  6. Bake for 10-12 minutes or until edges are golden but centers look slightly underbaked. Let them rest on the sheet for 5 minutes before transferring to a wire rack.

Notes

  • These cookies are best served fresh but can be stored in an airtight container for a few days.
  • For a richer flavor, consider adding chocolate chips.
