Description

This delicious slow cooker chicken chili is easy to make and perfect for any occasion.


Ingredients

Scale
  • 2 pounds boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans fire roasted mild diced green chiles
  • 2 cans cannellini beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 ½ cups frozen corn, thawed
  • ¾ block cream cheese (6 ounces)
  • Various spices (cumin, salt, pepper, chili powder, cayenne pepper, dried oregano)

Instructions

  1. Place chicken breasts in a slow cooker; season with spices.
  2. Add chicken broth, onion, garlic, green chiles, and bay leaf.
  3. Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  4. In the last two hours of cooking, add cannellini beans and corn.
  5. Blend part of the chili for creaminess; return to the slow cooker.
  6. Shred chicken and mix back into the chili before serving.

  • This chili pairs well with cornbread or tortilla chips.
