This delicious slow cooker chicken chili is easy to make and perfect for any occasion.
Ingredients

- 2 pounds boneless skinless chicken breasts
- 4 cups chicken broth
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cans fire roasted mild diced green chiles
- 2 cans cannellini beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 ½ cups frozen corn, thawed
- ¾ block cream cheese (6 ounces)
- Various spices (cumin, salt, pepper, chili powder, cayenne pepper, dried oregano)
Instructions
- Place chicken breasts in a slow cooker; season with spices.
- Add chicken broth, onion, garlic, green chiles, and bay leaf.
- Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- In the last two hours of cooking, add cannellini beans and corn.
- Blend part of the chili for creaminess; return to the slow cooker.
- Shred chicken and mix back into the chili before serving.

- This chili pairs well with cornbread or tortilla chips.
