Ingredients

- 8 oz rotini pasta
- 1 cup canned artichoke hearts, drained and chopped
- 4 cups fresh arugula
- 1/4 cup freshly squeezed lemon juice
- 1 cup cherry tomatoes, halved
- 1/3 cup extra virgin olive oil
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente (about 8-10 minutes).
- Drain and toss gently.
- Top with Parmesan cheese and serve immediately or chill for 30 minutes to enhance flavors.
