- 2 cups cooked chicken
- 8 oz rotini pasta
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup milk
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Bring a large pot of salted water to a boil. Add rotini pasta and cook until just al dente. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
- Stir in flour and whisk to create a roux, cooking for another 1–2 minutes.
- Gradually whisk in chicken broth and milk, stirring constantly to avoid lumps. Cook until the sauce begins to thicken, about 3–5 minutes.
- Stir in the cooked chicken, Parmesan, and mozzarella. Mix until cheeses are fully melted and the sauce is smooth.
- Add the cooked pasta into the skillet, tossing to coat evenly in the sauce.
- Season with salt and black pepper. Sprinkle with chopped parsley if desired before serving.
Notes
- This recipe can be customized with your favorite vegetables, such as spinach or bell peppers.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
