Description
This grilled lemon oregano chicken tenders recipe is perfect for a quick weeknight dinner!
Ingredients
Scale
- 1 ½ lbs chicken tenders
- ¼ cup olive oil
- 3 tablespoons lemon juice (freshly squeezed)
- 3 garlic cloves, minced
- 1 ½ teaspoons dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- Marinate the chicken: Start by placing the chicken tenders in a large zip-top bag or shallow dish. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper. Pour the marinade over the chicken and toss to coat evenly. Let the chicken marinate for at least 30 minutes, or up to 8 hours in the refrigerator for deeper flavor.
- Heat your pan or grill: When ready to cook, heat a large skillet over medium-high heat. You can also fire up your grill or use a grill pan for a smoky char.
- Cook the chicken tenders: Add the chicken tenders to the hot pan in a single layer, working in batches if necessary. Cook for 3–4 minutes on each side until golden brown and cooked through (internal temp should reach 165°F). Avoid overcrowding the pan so the tenders get a nice sear.
- Rest and serve: Once cooked, let the chicken rest for 5 minutes before serving. This helps lock in the juices and keeps the tenders moist. Serve with lemon wedges, fresh parsley, or your favorite Mediterranean sides — like tzatziki, rice pilaf, or a classic cucumber-tomato salad.
Notes
- I like to prep this in the morning before work, so when dinner rolls around, all I have to do is cook.
