Description
A refreshing salad combining cucumbers, radishes, and a light dressing.
Ingredients

- 4 mini or Persian cucumbers
- 8 radishes (1 bunch)
- 2 green onions, thinly sliced
- 1 tablespoon fresh dill, chopped
- 2 tablespoons olive oil
- 1½ tablespoons fresh lemon juice
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Wash and dry the cucumbers and radishes.
- Thinly slice the cucumbers and radishes using a sharp knife or mandoline.
- Thinly slice the green onions and chop the fresh dill.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- In a medium bowl, combine cucumbers, radishes, green onions, and dill.
- Drizzle the dressing over the salad and toss gently to coat.
- Serve immediately or chill for 30 minutes before serving.
