Description

A refreshing salad combining cucumbers, radishes, and a light dressing.


Ingredients

  • 4 mini or Persian cucumbers
  • 8 radishes (1 bunch)
  • 2 green onions, thinly sliced
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons olive oil
  • tablespoons fresh lemon juice
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash and dry the cucumbers and radishes.
  2. Thinly slice the cucumbers and radishes using a sharp knife or mandoline.
  3. Thinly slice the green onions and chop the fresh dill.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. In a medium bowl, combine cucumbers, radishes, green onions, and dill.
  6. Drizzle the dressing over the salad and toss gently to coat.
  7. Serve immediately or chill for 30 minutes before serving.
