- 1 1/2 pounds boneless, skinless chicken breasts or thighs, pounded to an even thickness
- 1/3 cup olive oil
- 3 tablespoons lemon juice
- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper flakes
Instructions
- In a freezer bag or glass bowl, whisk together all marinade ingredients until smooth and well combined.
- Add the chicken breasts or thighs to the marinade, ensuring they are fully coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or overnight for more flavor.
- Preheat your grill to 400°F. Clean and grease the grates.
- Remove the chicken from the marinade and let it sit at room temperature for 15-30 minutes before grilling.
- Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F. Let the chicken rest for 5 minutes before serving.
Notes
- For best flavor, marinate the chicken overnight.
- This marinade works well with vegetables as well.
