Delicious breakfast sandwiches made with croissants, eggs, cheese, and ham.

- 8 croissants, sliced in half
- 8 slices sharp cheddar cheese
- 8 slices deli ham
- 6 large eggs
- ⅓ cup whole milk
- ½ cup shredded mozzarella cheese
- Salt, to taste
- Black pepper, to taste
- Optional add-ins: sautéed spinach, sautéed mushrooms, avocado slices, hot sauce, Dijon mustard
Instructions
- Preheat oven to 350°F.
- In a bowl, whisk eggs, milk, salt, and pepper until combined.
- Heat a greased skillet over medium-high heat and pour in egg mixture.
- Cook eggs gently, stirring with a spatula until nearly set.
- Stir in shredded mozzarella and cook until melted, then remove from heat.
- Place croissant bottoms on a baking sheet.
- Add one slice of ham and one slice of cheddar to each croissant.
- Spoon scrambled eggs over the cheese.
- Top with croissant tops and gently press down.
- Bake for 10 minutes until cheese is melted and croissants are lightly crisp.
- Serve warm.
