A delicious creamy mushroom chicken dish that is perfect for dinner.

- 2 large chicken breasts (boneless, skinless)

- for dredging Flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 12 ounces mushrooms (cremini or white), sliced
- 1/4 teaspoon Italian seasoning
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 teaspoon lemon juice
- 1/2 teaspoon Dijon mustard
- 1 cup heavy cream
- for garnish Fresh parsley (optional)
- for garnish Freshly grated Parmesan cheese (optional)
Instructions
- Cut the chicken breasts in half lengthwise to create thinner cutlets. Season with salt, pepper, and garlic powder. Dredge lightly in flour.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter, then add the mushrooms and Italian seasoning. Cook for 5-7 minutes until golden brown. Remove the mushrooms and set aside with the chicken.
- Add garlic to the pan and cook for 30 seconds. Stir in chicken broth, lemon juice, and Dijon mustard. Cook for 3-4 minutes to reduce the broth by half.
- Pour in the heavy cream and simmer for 2-3 minutes to thicken the sauce slightly.
- Add the chicken and mushrooms back into the pan. Simmer for 5 minutes until the chicken is cooked through and coated in the creamy sauce.
- Garnish with parsley and Parmesan cheese, then serve.
