Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, diced
  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
  2. Pat the chicken breasts dry and season generously with salt, pepper, and Italian seasoning.
  3. In a bowl, combine zucchini, bell peppers, cherry tomatoes, minced garlic, olive oil, and additional Italian seasoning; toss until well-coated.
  4. Arrange the seasoned chicken in the center of the baking dish and surround it with the vegetable mixture.
  5. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Allow to rest before serving.
