- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, diced
- 2 bell peppers (1 red, 1 yellow), sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 3 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
- Pat the chicken breasts dry and season generously with salt, pepper, and Italian seasoning.
- In a bowl, combine zucchini, bell peppers, cherry tomatoes, minced garlic, olive oil, and additional Italian seasoning; toss until well-coated.
- Arrange the seasoned chicken in the center of the baking dish and surround it with the vegetable mixture.
- Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Allow to rest before serving.
