Description

This delicious banana bread is enhanced with pineapple and coconut for a tropical twist!


Ingredients

  • 3 medium ripe bananas
  • 1/2 cup melted unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 cup drained pineapple tidbits
  • 3/4 cup shredded sweetened coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Stir in melted butter, eggs, and vanilla until well combined.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Gradually stir the dry mix into the banana mixture—do not overmix.
  6. Fold in sugar, pineapple tidbits, and shredded coconut.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55–65 minutes, or until a toothpick inserted comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
