Ingredients

- 4 boneless, skinless chicken breasts (1 lbs)
- 1 cup full-fat Greek yogurt
- 1 medium cucumber, grated
- 2 garlic cloves, minced
- Juice of 1 lemon
- 2 tbsp fresh dill or mint, chopped
- 4 warm pita breads
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lemon juice, salt, pepper, garlic, and herbs. Add chicken breasts and coat evenly. Let marinate for at least 30 minutes.
- Cook the Chicken: Preheat a grill pan over medium-high heat. Grill the marinated chicken for 6-7 minutes per side until golden brown and cooked through.
- Prepare Tzatziki Sauce: Squeeze excess moisture from grated cucumber. Combine with Greek yogurt, minced garlic, lemon juice, dill or mint, salt, and pepper.
- Assemble Bowls: Slice cooked chicken and place over warm pita. Top generously with tzatziki and additional veggies of your choice.
