Description

A savory and flavor-packed Chow Mein recipe that combines tender noodles, stir-fried chicken, and a delicious sauce.


Ingredients

  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 cup chicken broth
  • 8 ounces fresh chow mein noodles
  • 2 tablespoons vegetable oil, divided
  • 1/2 pound boneless skinless chicken breast, sliced thin
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 onion, thinly sliced
  • 2 cups napa cabbage, shredded
  • 1/2 cup carrot, julienned
  • 2 green onions, cut into 2-inch pieces
  • 2 cloves garlic, minced

Instructions

  1. Make the Sauce: In a small bowl, whisk together the oyster sauce, light and dark soy sauces, sugar, sesame oil, and chicken broth. Set aside.
  2. Prepare the Chicken: In a medium bowl, toss the sliced chicken breast with cornstarch, salt, and white pepper. This gives the meat a silky texture and helps it brown beautifully when stir-fried.
  3. Cook the Noodles: If your chow mein noodles are not pre-cooked, follow the package instructions. Once done, rinse under cold water to stop the cooking and prevent sticking.
  4. Stir-Fry the Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden and just cooked through, about 3–4 minutes. Remove and set aside.
  5. Stir-Fry the Veggies: Add the remaining tablespoon of oil to the same pan. Toss in the onions, garlic, carrots, and cabbage. Stir-fry until the vegetables are just tender but still crisp—about 2–3 minutes.
  6. Combine Everything: Return the chicken to the pan. Add the noodles and pour in the sauce. Toss everything together until well combined and heated through. Add green onions at the very end for a fresh pop of flavor.
