Delicious smash burgers paired with a zesty secret sauce, perfect for any barbecue.
Ingredients
- 1 lb ground beef (80/20 blend recommended)
- Salt and pepper, to taste
- 4 burger buns
- 4 slices cheddar cheese
- 1 tablespoon vegetable oil
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon finely diced pickles
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon pickle juice (optional, for extra tang)
- Optional: Shredded lettuce
- Optional: Sliced tomato
- Optional: Thinly sliced red onion
- Optional: Turkey ham
- Optional: Pickles

Prepare the Secret Sauce: In a small bowl, mix together the mayonnaise, ketchup, mustard, diced pickles, garlic powder, onion powder, and pickle juice. Stir well until combined. Chill in the fridge while you prepare the burgers so the flavors can meld.
Form Loose Beef Balls: Divide the ground beef into 4 equal portions and gently roll them into loose balls. Don’t overwork the meat—you want them to stay airy for that perfect smash.
Heat the Griddle or Cast-Iron Skillet: Add vegetable oil to a cast-iron skillet or griddle and heat over medium-high until very hot—almost smoking.
Smash the Patties: Place two beef balls in the skillet and immediately smash them flat using a heavy spatula or burger press. You want them thin—around 1/4 inch thick—with jagged edges. Season generously with salt and pepper.
Sear and Flip: Let the patties cook undisturbed for about 2 minutes until a crust forms. Flip carefully, add a slice of cheese to each, and cook for another 1–2 minutes.
Toast the Buns: While the burgers cook, toast the buns face-down on the griddle until golden brown.
Assemble the Burgers: Spread a generous layer of secret sauce on both the top and bottom buns. Add shredded lettuce, tomatoes, turkey ham, or your favorite toppings. Stack the cheesy patties on the bun and top with the other half.
Serve Hot: Serve immediately while the cheese is melty, and the burger is still juicy.
