Ingredients

- 4 boneless skinless chicken breasts (about 1 lbs)
- 2 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1 can (10 oz) cream of chicken soup
- 3 cups cooked white or brown rice
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- ½ cup sliced green onions
- 1 cup crispy chow mein noodles
- 1 cup sweet pineapple chunks
Instructions
- Cook the chicken: In a large skillet over medium heat, add 1 tablespoon olive oil. Sauté seasoned chicken breasts until golden and cooked through (6-8 minutes). Remove and chop.
- Make the sauce: In another saucepan over low heat, combine cream of chicken soup and chicken broth, stirring until creamy (about 5 minutes).
- Prepare the rice: Cook rice according to package instructions.
- Assemble: Serve a generous scoop of rice on each plate, top with creamy chicken mixture, and layer on your choice of toppings.
- Serve immediately and enjoy!
