Description
Delicious chocolate covered Medjool dates stuffed with creamy peanut butter and roasted peanuts, sprinkled with sea salt.

- 10 Medjool dates
- 5 tablespoons creamy peanut butter
- 3 tablespoons roasted peanuts
- 100 grams dark chocolate (about 3 ounces)
- 1 teaspoon coconut oil (optional)
- Sea salt, for sprinkling
Instructions
- Slice each Medjool date lengthwise, remove the pit, and gently open the date like a book without cutting all the way through.
- Fill each date with about 1/2 tablespoon of peanut butter.
- Press a few roasted peanuts into the peanut butter of each date.
- Melt the dark chocolate with coconut oil (if using) until smooth.
- Dip each stuffed date into the melted chocolate, coating it completely. Place on a parchment-lined tray.
- Sprinkle sea salt over the tops while the chocolate is still wet.
- Refrigerate for 10 minutes, or until the chocolate has set. Serve or store as desired.
