Description

Delicious chocolate covered Medjool dates stuffed with creamy peanut butter and roasted peanuts, sprinkled with sea salt.


Ingredients

Scale
  • 10 Medjool dates
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons roasted peanuts
  • 100 grams dark chocolate (about 3 ounces)
  • 1 teaspoon coconut oil (optional)
  • Sea salt, for sprinkling

Instructions

  1. Slice each Medjool date lengthwise, remove the pit, and gently open the date like a book without cutting all the way through.
  2. Fill each date with about 1/2 tablespoon of peanut butter.
  3. Press a few roasted peanuts into the peanut butter of each date.
  4. Melt the dark chocolate with coconut oil (if using) until smooth.
  5. Dip each stuffed date into the melted chocolate, coating it completely. Place on a parchment-lined tray.
  6. Sprinkle sea salt over the tops while the chocolate is still wet.
  7. Refrigerate for 10 minutes, or until the chocolate has set. Serve or store as desired.
