This delicious Baked Caprese Chicken is easy to prepare and packed with flavor, featuring juicy chicken breasts topped with fresh mozzarella, tomatoes, and basil.

- 4 medium boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp sea salt
- 1/4 tsp black pepper
- 4 oz fresh mozzarella cheese (sliced)
- 2 medium Roma tomatoes (thinly sliced)
- 2 tbsp balsamic glaze
- 1/2 cup fresh basil (cut into ribbons)
Instructions
- Preheat the oven to 400°F (204°C).
- Arrange chicken breasts in a large baking dish, drizzle with olive oil, and season with salt and pepper.
- Bake chicken for 20 minutes, or until it reaches an internal temperature of 150°F (65°C). Use a meat thermometer for accuracy.
- Top each chicken breast with a slice of mozzarella cheese and a few slices of Roma tomato.
- Bake for an additional 5–10 minutes until the cheese is melted and bubbly, and the chicken reaches 165°F (74°C).
- Allow the chicken to rest for 5 minutes before serving.
- Drizzle with balsamic glaze and sprinkle with fresh basil ribbons. Serve immediately.
