- 2 cups fresh green beans, trimmed
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 3 tbsp low-sodium soy sauce
- 1/2 cup low-sodium chicken broth
- Salt and pepper to taste
- 1 tsp smoked paprika
Instructions
- Prep the ingredients by washing and trimming the green beans and dicing the chicken into bite-sized pieces.
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and sear until golden brown (5-7 minutes).
- Stir in minced garlic and green beans; cook until the beans are bright green (about 3-4 minutes).
- Pour in soy sauce and chicken broth, stirring to combine. Let it simmer gently for another 3-5 minutes.
- Finish with a sprinkle of smoked paprika, then serve hot over rice or quinoa.
